真相

国际癌症研究机构的 1 类,量的是证据有多确定,不是风险有多大:每天 50 g 加工肉,结直肠癌相对风险约 1.18;吸烟的肺癌相对风险约 15-30(Bouvard 2015)。

2015 年,国际癌症研究机构(IARC)把加工肉列为 1 类,也就是对人类致癌。这条新闻当时引起不小的恐慌,最常见的误读是加工肉和吸烟一样致癌。这是错的。

For processed meat it deliberately gives NO gram figure, only the wording consume very little, if any. Evidence grading for colorectal cancer: processed meat is graded convincing, red meat probable.

Two statements that bound how the classification may be used, both verbatim: IARC is a research organization that evaluates the evidence available on the causes of cancer but does not make health recommendations as such; and, on whether an intake threshold exists, the data available for evaluation did not permit a conclusion about whether a safe level exists. Cite this record - not the Group 1 / 2A classification alone - whenever the site states the 50 g / 18 percent figure or explains why IARC issues no gram limit. Red meat, verbatim: if the association of red meat and colorectal cancer were proven to be causal, data from the same studies suggest that the risk of colorectal cancer could increase by 17% for every 100 gram portion of red meat eaten daily (Q&A page, re-read 2026-09-25).
