The problem with processed and red meat plays out mainly in the colon: N-nitroso compounds from curing, together with the oxidation that heme iron promotes in the gut, are thought to damage the DNA of the cells lining the bowel. The International Agency for Research on Cancer (IARC) classifies processed meat as Group 1 and red meat as Group 2A carcinogens; the grades describe how certain the evidence is, not how large the harm is.
