A CLOSER LOOK
Color and air pockets cannot replace the label
This is one example of bread's appearance. Brown color, grain flecks and airy crumb cannot prove the whole-wheat proportion or fermentation time.

- 1Brown appearance
- Brown color can come from ingredients or coloring. Read the ingredient list to see whether whole-wheat flour comes first.
- 2Baked crumb
- Bread goes through milling, mixing with water, fermentation and baking. This cut face does not reveal how much bran and germ remain.
