Table, wine and raisin grapes

EVIDENCEGUIDE 1

READ THE ORIGINAL

Grapes need almost no chewing, carry little fiber, and do not fill you up, which makes them one of the few fruits that are easy to eat handful after handful past the point you meant to. And resveratrol, the compound in the skin that is sold as anti-aging, is mostly altered in the gut wall and the liver after you swallow it, so it never reaches a level where it could do anything. Why grapes are so easy to overeat, and where exactly resveratrol gets stuck, are covered in the chapters on grapes being mostly sugar and water and on whether resveratrol slows aging.

Grapes are among the most widely grown fruits in the world, but a grape actually goes down three very different paths: table grapes, wine grapes, and grapes dried into raisins.

Table grapes are large, thin-skinned, sweet, and juicy; wine grapes are small, thick-skinned, and full of seeds, with more concentrated polyphenols and sugar. By color, green grapes are lower in polyphenols, while red and purple-black grapes carry more anthocyanins and other polyphenols in the skin.
