Real antagonism in a meal means a few common ingredients grab or block a nutrient in the gut, so less of it is absorbed at that meal. That is different from the folk idea of food clashes — two foods that supposedly poison you or cause stones when eaten together — and most of those claims do not hold up.

The most-studied victim is the iron in plants, called non-heme iron: iron that is not held inside the heme ring, and that is harder to absorb than the iron in meat to begin with. Three kinds of things in the same meal push it down:

Polyphenols in tea and coffee, of which tannins are one kindA large amount of calcium eaten at onceOxalate and phytate in vegetables, legumes, and whole grains
The chapter on calcium, oxalate, and phytate explains which step of absorption each one blocks. These drags and the helpful pairings in Synergy in a Meal are two sides of the same thing.

Hold on to the most important point first: for most people with normal iron stores, these effects are small in an everyday diet and are not worth changing habits over. The people who should really space things out are those who are already iron-deficient or need extra iron.
