机制 · 镁到底在干什么

边界 · 芦丁: 成分是真的, 结论还不是
芦丁属于类黄酮, 是植物界很常见的一大类多酚. 植物造它主要是给自己用的 —— 挡紫外线、对付氧化压力、给花和种皮上色. 荞麦在这一项上是少见的高手, 它的叶、花和外层里芦丁都不少; 荞麦蜜颜色深、味道冲, 就是这套化学的一个侧面.类黄酮抗氧化这四个字在化学上有确切含义: 这类分子上挂着好几个羟基, 上面的氢比较容易被抢走. 遇到一个到处抢电子的自由基, 它先把自己的氢让出去, 自己变成一个相对稳定、不再到处惹事的形态 —— 相当于拿一个温和的顶上去, 换掉一个凶的.
到这里为止都是化学, 是能确定的. 但从化学走到吃荞麦对血管有好处, 中间还差好几步, 而这几步没有可以引用的人体证据:
一份荞麦面里的芦丁到底有多少煮过之后还剩多少 (水溶性的东西会跑进汤里)吃进去有多少真的被吸收进血, 又以什么形态在体内循环要达到实验里那个浓度得吃多少有没有人体终点上的结果, 而不只是某个指标动了一下
所以本站对芦丁的立场是: 荞麦含有一种别的谷物少见的成分, 这是事实; 而所以荞麦能保护血管, 是一条还没走完的推论. 这两句之间的距离, 恰恰是所有食物保健话术最爱一步跨过去的那一段.
机制 · 烟酸: 为什么玉米的不算数
烟酸 (niacin, 也叫维生素 B3) 在荞麦里的量不算突出, 但它牵出一个很值得懂的道理: 食物里有和你能拿到是两件事.玉米里其实有烟酸, 而且不少. 问题是它在玉米里是被绑住的形态 —— 烟酸分子挂在别的分子上, 而人的消化道没有能把这个连接剪开的酶. 剪不开就吸收不了, 于是它跟着食物残渣一起走掉. 传统上用碱水泡煮玉米的做法能把它解放出来: 那一步不是为了口感, 是把一份看不见的营养变成看得见的.
荞麦的烟酸不是这种被绑住的形态, 所以标签上的数字更接近你实际能拿到的数字.

机制 · 乳糜泻: 为什么连微量污染也不行
乳糜泻常被压缩成免疫介导的疾病几个字带过, 但正是这几个字里的东西, 决定了为什么一点点污染也不能有. 把它拆成四步走一遍.第一步, 剪不干净. 麦醇溶蛋白这条链上, 脯氨酸和谷氨酰胺特别密集, 而人的消化酶剪不动脯氨酸旁边的那种键. 别的食物蛋白都被剪成很短的碎片吸收掉了, 它却留下一批仍然相当长的肽段.
第二步, 走错了门. 这些长肽段从肠壁细胞之间的缝隙钻到黏膜下面 —— 那本来不是食物该去的地方. 到了那里, 一种酶会给它做一点化学改造, 改造之后它在免疫系统眼里变得格外显眼.
第三步, 认错了敌人. 带有特定免疫识别基因的人, 免疫细胞把这段肽当成入侵者, 发起攻击. 麻烦在于这段肽不是活物, 打不死也赶不走 —— 真正挨打的是它所在的地方, 也就是患者自己的小肠黏膜.

为什么连微量污染也不行: 免疫记忆一旦建立, 重新点燃它需要的量, 远小于当初建立它需要的量; 而绒毛长回来是以周计的工程. 反复的微量摄入会让肠子一直停在刚开始修、又被打断的状态 —— 损伤是持续的, 不是一次性的. 所以掺了一点小麦粉在这里不是差一点, 是不行.
为什么它常常先表现成贫血: 铁和叶酸主要在小肠靠前的那一段被吸收, 而那正是绒毛最先被磨平的地方. 于是很多人是先查出缺铁性贫血, 一路追原因才追到乳糜泻, 肚子可能一点都不痛 —— 没肚子疼就不是乳糜泻这个直觉靠不住.

纯荞麦难成形这句话在前面出现过几次, 值得解释一下 —— 它同时也是所有无麸质面食的通用困难.小麦粉能被搓成条、拉成面、擀成皮, 靠的是麸质那张网: 两类蛋白遇水交联成连续的网络, 既能被拉长, 又能弹回去. 面团有筋, 说的就是里面有这张网.
荞麦没有这套蛋白, 所以荞麦粉加水之后只是一团湿的粉, 没有筋. 面条一下锅就容易断、容易把汤煮浑. 传统解法有三条: 掺一部分小麦粉, 借那张网; 用别的带黏性的材料把颗粒粘住; 或者靠手法和水温, 让一部分淀粉先糊化, 用它自己当黏合剂.
第一条最省事, 也最常见 —— 于是市售荞麦面掺小麦粉成了常态. 对只追求口感的人这无所谓; 对需要无麸质的人, 这一步是致命的: 荞麦的无麸质来自它的身份, 而掺粉等于把那个身份稀释掉了.
所以在荞麦这里看配料表, 不是挑好一点的, 是确认它还是不是原来那个东西.

Two buckwheat pitches taken apart:
Pitch one: buckwheat lowers the three highs (glucose, blood pressure, lipids). Compositional-extrapolation talk. Buckwheat has fiber, rutin and magnesium — nutrients friendly to those markers — but 'friendly' is not 'curative': no clinical evidence shows buckwheat brings patients to target (the full takedown structure is in bitter-melon and superfoods). Buckwheat's right positioning: a better staple than white rice, not a supplement replacing medication.
Pitch two: buckwheat noodles can't make you fat, eat freely. Buckwheat noodles (pure) rise glucose more slowly than regular noodles, but calories are not low — a bowl's calories are set by noodle amount, sauce and oil. Cold-noodle dip contains sugar; hot-noodle broth contains salt; the sides decide half the meal. 'Buckwheat = low-calorie' swaps 'flatter glucose' for 'low calorie'.
The universal test for such pitches: separate 'the compound exists' from 'intake is effective' — rutin in buckwheat is real, but whether a serving's rutin reaches an effective dose in studies, and whether human evidence exists, is a different question. Compositional extrapolation (in vitro/animal) to human benefit is the universal error of grain health claims.

方法 · 从成分到功效, 中间隔着四道关
某某食物含有某某成分这句话本身通常是真的. 话术的漏洞几乎从不在这一句上, 而在从这一句跳到所以吃它有用的那一跳. 把这一跳拆开, 至少有四道关.第一关是量. 食物里的天然含量和研究里用的剂量, 常常差着一两个数量级. 很多有效成分在实验里是提纯浓缩之后用的, 靠吃原型食物根本够不到那个量.
第二关是存活. 烹饪、胃酸、消化酶都会改变分子. 水溶性的成分可能跑进汤里被倒掉, 怕热的成分可能在锅里就没了.
第三关是吸收. 进了肠道不等于进了血. 很多多酚类的吸收率很低, 而且进去之后会被肝脏迅速改造成别的形态 —— 最终到达组织的那个分子, 可能已经不是你在成分表上看到的那个了.
第四关是终点. 就算前三关都过了, 研究看的到底是某个指标动了一下, 还是人真正在意的结果 (少生病、少住院、活得更久)? 这两者之间不能自动划等号.
荞麦的芦丁卡在这四关之间, 所以本站的写法止于它含有芦丁, 不往后延.
把这四道关记住, 你不需要懂每一种成分, 也能判断绝大多数超级食物宣传有没有走完全程. 最后补一句公道话: 这四关不是用来否定食物的 —— 荞麦是不是一个好主食, 和芦丁能不能治病, 本来就是两个独立的问题, 而前一个问题的答案是肯定的.
