Kiwifruit originates from the Yangtze River valley of China, introduced to New Zealand in the early twentieth century where it was selectively bred into the green-flesh kiwi (Actinidia deliciosa) common in supermarkets today. 一个容易被夸大的说法
有人把 actinidin 说成能帮你消化整顿饭. 现实是: 它只在它和食物真正接触的那一小段时间和位置里干活, 而胃里本来就有自己的一整套蛋白酶. 把它当成一个厨房工具比当成消化补剂更贴近事实.
安全 · 嘴里刺痛和过敏不是一回事
不少人吃猕猴桃 —— 尤其是没熟透的绿猕猴桃, 或者一口气吃了好几个 —— 会觉得舌头和上颚发麻、发涩, 像被细砂纸磨过. 这多数时候不是过敏, 而是两股力量叠在一起的局部刺激.一股是刚才那把剪刀
口腔黏膜表面也是蛋白质. 酶在上面轻微地干了活, 你感觉到的就是那种发涩、发紧.
另一股是果肉里的针状结晶

所以该怎么用这条信息

变软: 把细胞撑住、把细胞彼此黏在一起的是果胶. 成熟程序开启一批专门拆果胶的酶, 细胞之间的黏合被一点点松开, 果肉就从硬变软.变甜: 未熟的果子把能量存成淀粉, 而淀粉不甜. 另一批酶把淀粉一段段拆成糖 —— 甜味不是从外面进来的, 是本来就在里面, 只是换了个形式. 这也是为什么摘下来的生猕猴桃还能变甜, 而摘下来的西瓜不会: 西瓜没有可供拆解的淀粉库存.变香: 一些香气分子要到这个阶段才被合成出来. 所以生果闻不出味, 熟果一切开就香.
于是冰箱的作用也清楚了
低温让上面这些酶都慢下来, 成熟被按住. 所以正确顺序是先在室温催熟, 熟了再进冰箱; 反过来把生果直接冷藏, 它会一直硬着, 拿出来也很难再好好熟.
切开之后为什么要快点吃
维生素 C 的本职就是替别人挨氧化, 所以它自己极容易被氧化成不再有活性的形式. 整颗果子有皮挡着、内部接触到的氧气也少; 一切开, 断面直接暴露在空气里, 果肉里原本被分隔开的氧化酶也被放了出来, 就地开始拆维 C.
注意这和煮汤时的损失不是一回事: 煮汤是维 C 跑到水里了 (连汤喝掉还在), 而切开氧化是它真的坏了, 捡不回来.
对应的做法很简单: 现切现吃; 需要提前准备就整颗放冰箱, 吃之前再切.
